世界各地都有大量的“咖啡师培训机构”,但是没有一个独立的、基于知识和制作能力的测试和认证机制。就像考取驾驶执照一样,欧洲特种咖啡协会将不管你是在哪里接受的培训,甚至是自己学会的,你只需通过我们的书面、口头、和实际操作的测试就可以获得我们的认证。我们的测试是建立在最常见的国际标准上的。
因为现代咖啡师的作用已经超越了意式咖啡机和磨豆机的范围,所以我们的测试将会包括其它制作工具的使用,和一般咖啡知识。
我们所划分的三个等级分别是:
一级标准,初级咖啡师
要求有六个月的工作时间记录,可以是在咖啡厅,咖啡烘焙企业,或咖啡销售企业;
测试内容包括三个方面的笔试,分别是,基础咖啡知识,含咖啡的种植、加工、分级、烘焙和品尝;
基础制作知识,咖啡萃取的理论,和其它常用咖啡制作方法的基本知识;
意式咖啡基础知识,包括咖啡机、磨豆机、机器操作、咖啡、制作和各种咖啡饮料;
还有简单的实际操作测试;
二级标准,中级咖啡师
要求有一年的工作记录,并通过了上一级的测试。
笔试内容与前相同,只是增加了难度。
测试难度更大,还有一个口试。
三级标准,高级咖啡师
要求有二年的工作记录,并通过了中级咖啡师的测试。
笔试、口试、和实际操作测试都按照专家级的要求,还包括咖啡品尝。

Throughout the world there are numerous barista educational programs, but no independent certification programs basted on testing the knowledge and skills of the barista. Much like you take a certificate for a motorcycle, a car and a bus, the SCAE will not ask where you got your skills and knowledge, we will just pass the baristas through written, oral and practical examination based on the most common international standards.
Since the role of the modern barista goes beyond the espresso machine and the grinder itself the tests will also include other brewing methods and and also general coffee knowledge.
The 3 test levels are as follows:
This requires 6 months documented practice from café or coffee bar, roaster or supplier. The barista will pass a written test featuring 3 areas:
Basic coffee knowledge including growing, processing, grading, roasting and tasting.
Basic brewing knowledge including the theory behind extraction and basic knowledge of the most common brewing methods.
Basic espresso knowledge including machine, grinder, operation, coffee, brewing and various beverages.
There will also be some simple practical tests.
This requires 1 year of relevant documented practice and that the test for the previous level is passed.
The written test will feature the same elements, but with an increased level of difficulty.
There will be a more comprehensive test included an oral test.
The program will be launched in Trieste, where baristas both can attend a workshop that will cover the theoretical background for level one and pass the written and practical test. Those who pass will receive their Certified Basic Diplomas during the next two weeks.
During the remaining part of the year the SCAE will organise more basic exams and also exams for the next level.
This will require 2 years of relevant practice and that the previous level exams has been passed.
The written, practical and oral tests will be kept on master level and will also include coffee tasting.
